Pearl’s Christmas Soup
My wonderful Grandma Pearl made a large pot of this soup every year for her Christmas Eve gathering of family and friends. This year, I got the recipe from my mother and continued our holiday tradition of getting together and enjoying this hearty tomato-y stew. When I prepare this recipe, I prefer to omit the ground beef and make it as a vegetarian soup. This recipe makes a LOT of soup and could easily be cut in half to make less.

Ingredients
- ground beef
- salt
- pepper
- 1 large red onion
- 2 red bell peppers
- 8 ribs of celery
- 6 carrots
- 4 potatoes
- 3 med turnips
- ½ head green cabbage
- 2 cans whole peeled canned tomatoes
- 32 oz vegetable broth
- water if needed
Instructions
- Chop all vegetables
- In a large pot, brown the ground beef (if you're using meat), salt, pepper, onion, bell pepper, and celery.
- Add carrots and potatoes
- Add turnips, cabbage, canned tomatoes, and vegetable broth. Stir to break up large pieces of tomato.
- Cover and simmer on low heat till vegetables are tender.
